Jo Seagar’s Pineapple Shortcake

pineapple-shortcakeBring one 455g can crushed pineapple in juice or syrup to boil (use two cans if you want a richer filling – one crushed, one pieces).

Thicken with 3T custard powder mixed to a paste with 1/4c water.
Cool. 

In a food processor,
cream 125g butter, 3/4c sugar,
add 1 egg and sifted 1/4c cornflour,
1 1/2c flour and 1t baking powder.

Remove half the dough and press into a shallow sponge roll tin and spread with cooled pineapple filling.

Add extra 1/4c flour (approx) to remaining dough and pulse until mixture crumbles.

Sprinkle over pineapple filling, pressing down gently. Bake for 25-30 min at 180c.

When cooked, dust with icing sugar, serve warm or cold with cream or ice-cream.

Microwave Cinnamon Minute MugCake

1 T butter  – soften, 10-15 seconds MW
2 T sugar   – stir in
1 egg           – could share one egg >> 2 mugcakes
2 T sour cream  – stir in
1-2 drops  vanilla essence
1/4 c flour  – mix in briefly
1/8 tsp (pinch) baking powder

CRUMB TOPPING (optional, or not)
in separate ramekin or bowl – mix with fingers a few
1 T butter, 2 T flour, 1 T brown sugar,  1 t cinnamon

Add crumb onto top of mug mixture.

Cook  1 min 20 secs. Cool for a bit.
Serve with or without yoghurt or ice cream.

Chocolate Mug Cake

1 Coffee Mug (or 1 cup pyrex jug)
4 tablespoons flour (that’s plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Nuts (optional)
Small splash of vanilla

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly. Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 2.5-3 minutes on high.

The cake will rise over the top of the mug, but don’t be alarmed!
Allow to cool a couple of minutes, and tip out onto a plate if desired.

EAT! (this can serve 4 if you want to share!)

And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

My G10 made this – yum! Her first chocolate cake she’s baked. Both the chn got excited about it. Took some pics.
